At Forest Prairie Meats we cross breed our Mangalitsa with Pure bred Berkshire to capture the flavor and quality of both breeds. Our pork has a deep red color that is boldly contrasted with beautiful white marbling.  When cooked, it retains its moisture and has a rich pork flavor.    Our pork is raised outdoors in a stress-free environment.

Wilhelm Kohl: Well, first of all, the flavor is unbeatable. It’s the Kobe beef of pork. If you’re familiar with pigs, you’ll know that most pigs in the last 50 years have been bred to have virtually no fat, but be mostly lean meat. One of the advertising points was ‘The other white meat.’ But it turns out when you breed the fat out of the pig, it becomes tasteless. So people are starting to look for pork that tastes better, that tastes like real meat. And you can only do that with fat and marbling, so that’s what we’re offering.

In addition, a lot of people would like to have pigs that are not raised in a factory-type environment. You know, free-range, outdoors, they have a decent life. The Mangalitsa pigs are great for that — they like to forage, dig for grubs, they don’t wait around for you to feed them. So they’re the perfect pig for what people want at this moment.

Mangalitsa pigs are often referred to as the (Kobe beef of pigs). Very high end restaurants will use these pigs in their restaurants. The meat is a dark red with lots of marbling throughout, very tender and flavorful. Reserve yours now!!

How Can Mangalitsa Pasture Raised Pork Taste So Different from More Conventional Pork Breeds?

Mangalitsa pigs are a classified “lard-type” breed. However, Mangalitsa pigs actually have more unsaturated fat (versus high levels of saturated fat) than conventionally bred pigs (classified as “meat-type pigs”). When cooked, Mangalitsa pork is exceptionally, juicy, tender, and marbled. Chefs rave about the meat and lard’s versatility—the lard can be whipped, and chefs don’t need to dress up the meat’s flavor with excess salt or spices. When cured, Mangalitsa meat makes unsurpassed hams, charcuterie, and salamis, due to the high monounsaturated fat content (versus high polyunsaturated fat in commercially produced pork)

People who avoid carbohydrates and eat more fat, even saturated fat, lose more body fat and have fewer cardiovascular risks than people who follow the low-fat diet that health authorities have favored for decades, a major new study shows.

 

More recent clinical studies in which individuals and their diets were assessed over time have produced a more complex picture. Some have provided strong evidence that people can sharply reduce their heart disease risk by eating fewer carbohydrates and more dietary fat, with the exception of trans fats. The new findings suggest that this strategy more effectively reduces body fat and also lowers overall weight.
